Location:
San Gervasio is located inside the wonderful frame of the Pisa Hills, 25 Km far from the Thyrrenian Sea, surrounded by the pristine landscape of the Tuscan countryside. The whole estate consists of 400 hectares, of which 22 have been grown with vineyards, between 160 and 200 meters above sea level. The Mediterranean climate, dry and well ventilated, and the proximity of the sea make San Gervasio the perfect place for the cultivation of quality grapes.

Territory and Vineyards:
The soil of Sangervasio is plyocenic, composed by fossil shells, sand and a good amount of clay. The abundance of minerals in the soil gives the wines their characteristic "salty" notes in the mouth. A good reserve of underground water, when brought up to the surface with appropriate tilling techniques, helps the wines overcome the summer droughts that often strike Tuscany, and allows a balanced and generous ripening of the grapes. Since 1994, 22 hectares of vineyards have been planted, mostly with Sangiovese, Merlot, Cabernet Franc and Cabernet Sauvignon, and with a selection of white varieties (Chardonnay, Vermentino and Sauvignon Blanc). The new vineyards have from 6,000 to 12,000 vines per hectare, the latter being found in two blocks grown with Sangiovese and Merlot. From 1996 the estate has applied the principles of organic farming, certified by Bioagricert, and more recently it has embraced the bio-dynamic approach to viticulture, in order to show even more respect for its unspoiled nature.

Cellar:
Their philosophy in the cellar is the same as in the vineyards. The wine-making process is natural, without any chemical additives. Their wines are expression of the soil in which the grape is grown. There are no tricks or shortcuts… And that is how a truly fine wine is made!

Sangervasio’s cellars are located inside the historical buildings of the village, in perfect harmony with the farm and its surroundings. All the different parts that compose the cellar, Barriques room and Vin Santo room, have been maintained as they were and restructured in 1980. Technology respects architecture and tradition.
