He started the F&B Consultant business in 1997, Justin decided to start Pure Passion International to continue on and share his passion and love for fine dining. This time, Justin’s mission with Pure Passion was a “twist” to “Just Wines” as he wanted to expand from being a bottle shop concept and be able to work with top chefs to create degustation menus and promote fine dining as a total experience. Known in the Hong Kong foodie’s circuit, Justin has been advising, collaborating and sharing with top chefs around the world, pairing wines to enhance food flavors and bringing flavors from a multi racial Singapore which has rich spice mixes of peranakan, Indian, Malay and Singapore’s brand of Chinese cuisine; both hawker fare and fine dining to the palates of Hong Kong SAR and China. Coming from an engineering background, Justin felt that fine foods had to be “engineering” to deliver the best aromas, flavors and must both consistently smell and taste good each time it is served. Called a “gastronome expert in Hong Kong “(China Daily– Weekly August 19 -25, 2011 edition page 5 “Some Bright Ideas In Areas of Gloom”). Justin has been interviewed on several occasions giving views on the wine and food industry through economic peaks and lulls. In a television interview with CNN Bloomberg on 11th June 2005, Justin also gave his views and comments on “The effects on wine importers after the removal of the wines taxes in Hong Kong.” Known for his frank and open style of commentary, Justin believes in keeping the food industry open and transparent to consumers so that they anticipate the market; good times or bad times.
A serious gastronome, Justin has worked with famous chefs and done degustation menus(6 to 24 courses meals) for high profile corporate dinners spanning from the banking & financial arena and private clients.
